Also known as the Barbary (or Barbarie), they are leaner than Pekins, with redder meat and a more pronounced flavor. Muscovy ducks are very thin skinned and low in fat. A boneless hen breast is like a "duck steak". It is the cut favored by restaurants because each "side" weighs about 8 oz and makes a nice portion.
