Is it a cepe or a porcini? If you are in Italy it's known as a porcini and in France it's a cepe. No matter your name of choice, the mushroom has an ivory bulbous stem and brown, rounded cap. Saute and roast whole cepes; grill the caps whole. Saute the stems first, adding the caps about 3 minutes later. The stems are delicious diced into 1/2-inch pieces and sauteed with same size cubes of potatoes.
